4 Quick and Easy Pantry Meals

I'll show you four quick and easy meals I made from items I needed to use up in my pantry, fridge, and freezer. I've been focusing more on homemade meals for my family. That's one of the ways that I have lost 70 pounds.


I am not going to be specific about the amounts of the ingredients or the steps. I recommend just using whatever you have left in the kitchen and eyeballing the amounts you use, just like I did.


1. Creamy chicken

I have two chicken breasts that I seasoned with garlic and herb seasoning on both sides in the crockpot ready to go. I'm going to make a creamy chicken ranch dish.


Ingredients:

  • Chicken breasts
  • Can of creamy soup
  • 1 packet ranch dressing mix
  • 1 packet brown gravy mix
  • Seasonings of choice

I added a cup of water, a can of any creamy soup, a half to one packet of ranch dressing mix, and a packet of brown gravy mix. I mixed it up and poured it over the chicken. I let it cook on low for four to six hours.

I shredded the chicken after it cooked. You can thicken up the sauce with a little cornstarch if necessary.

I served it with mashed potatoes and broccoli.


2. Garlic parmesan chicken pasta

I put three seasoned chicken breasts in the crockpot. I made my own garlic parmesan sauce instead of buying the bottle. Our favorite bottled is Sweet Baby Ray’s but I wanted to do a homemade version. The homemade version is thicker.


Ingredients:

  • Chicken breasts

  • 1 block of cream cheese
  • Pasta
  • Seasonings

I poured quite a bit of sauce over the chicken in the crockpot.

Then I added a block of cream cheese on top. I cooked it on low for four to six hours.

I shredded it, cooked the pasta, mixed it in the crockpot, and served. It was so creamy. I added a little pasta water to thin it out a bit.

I served it with carrots. Here’s another super-simple and delicious supper.


3. Spaghetti and meatballs

Ingredients:

  • Meatballs
  • Spaghetti sauce
  • Pasta

I pulled out a bag of frozen meatballs and put them in the crockpot.

I added a jar of spaghetti sauce on top of the meatballs.

I cooked on low for four hours.

I added spaghetti, and sauce, and served it all with broccoli as a side. (Although in this photo my dish doesn’t have pasta).


4. Sloppy Joe’s hot pockets

Ingredients:

  • Pizza dough
  • Ground beef
  • Tomato sauce
  • Diced onion
  • Worcestershire sauce
  • Brown sugar
  • Seasonings of your choice

I made a quick pizza dough that I used for my pockets.

I added ground beef to a pan to brown and then drained the grease. I added in some diced onion while it sauteed.

While that heated up, I seasoned and baked my home-canned potatoes. They do taste different if you’re curious about canned potatoes.


You can bake these, fry them on the stovetop, or air-fry them. I drizzled olive oil on them, seasoned with salt, pepper, paprika, garlic, and onion powder, and tossed to coat. I put them in the oven to roast.

Back to the ground beef on the stove. I added tomato sauce, garlic and onion powder, paprika, and ground mustard to the cooked beef. I drizzled on Worcestershire sauce, brown sugar, salt, and pepper. I just eyeballed how much I added.

I divided the dough up into six pieces to make the hot pockets. I rolled each piece out as flat as possible.

I added a slice of cheese on top of each piece of dough and spooned on some Sloppy Joe meat mixture.

I pinched the dough closed. You can put an egg wash on them but I did not this time.

Then I baked them in a 400-degree Fahrenheit oven until golden brown.

Easy pantry meals
