Let’s Make Some Low Carb Snackies!

Hey, everyone! Welcome back! Today’s video is inspired by a bunch of requests, so let's dive into it.


These snacks are what I like to call "low carb by accident." We don’t make them because they’re low carb, we just love them and make them often. As it happens, they’re low carb, which is a bonus!


I’m going to share these simple and delicious snacks with you today. So let’s get started!

1. Pizza Dippers

We’re starting with Pizza Dippers, which are a huge hit in my house! Here’s what you need:

  • Mozzarella cheese
  • Pepperoni
  • Optional: Low-carb friendly pizza sauce for dipping

Steps:

  • Preheat your oven to 400°F.
  • On a baking sheet, place small piles of shredded mozzarella cheese. If you have sliced mozzarella, that’s even easier!


  • Top each cheese pile with a slice of pepperoni.
  • Sprinkle with a bit of oregano and garlic powder for extra flavor.
  • Bake until the edges of the mozzarella start to get crispy.
  • Once done, pat them dry to remove extra grease, fold them in half like little tacos, and let them firm up.

And that's it! Simple, tasty, and perfect for when you're craving a low-carb snack. My kids, Colin and Braden, absolutely love these!

2. Cheesy Protein Bites

Next up are Cheesy Protein Bites, which are super easy and only require two ingredients:

  • Egg whites
  • Cheese

Steps:

  • Beat about five egg whites and season them with salt and pepper.
  • Grease a muffin pan and add a bit of cheese to each cup.
  • Pour the egg whites on top of the cheese, then add a bit more cheese on top.
  • Bake at 400°F for about 5-8 minutes.
  • Once done, let them cool, and they’ll flatten a bit, making for the perfect bite-sized snack!

These cheesy bites are light, fluffy, and packed with protein. Braden loves dipping them in ranch dressing, though that's optional!

3. Low Carb Chicken Nuggets

One of our weekly favorites is Low Carb Chicken Nuggets. Here's what you’ll need:

  • Canned chicken (I use two large cans)
  • Cheese
  • Two eggs
  • Seasoning (salt, pepper, garlic powder, onion powder, and paprika)

Steps:

  • Drain two cans of chicken and add them to a bowl.


  • Add one cup of cheese, two eggs, and your seasonings.
  • Mix everything together and form the mixture into nugget shapes.
  • Bake at 400°F for 10 minutes, flip them, and bake for another 10 minutes.

These chicken nuggets are crispy, flavorful, and perfect for dipping in low-carb barbecue sauce or your favorite dipping sauce!

4. Low Carb Cheesy Buffalo Bites

Finally, we have my favorite: Low Carb Cheesy Buffalo Bites. Here’s what you’ll need:

  • 3 tbsp ranch dressing
  • 3 tbsp whipped cream cheese
  • Cheddar cheese (shredded or sliced)
  • Buffalo sauce
  • One can of chicken (drained)

Steps:

  • Pre-bake some cheese at 350°F for 4 minutes in a muffin tin to form the base.
  • In a bowl, mix together the drained chicken, cream cheese, ranch, and buffalo sauce.
  • Spoon the chicken mixture onto the cheese base and top with more cheese.
  • Bake for another 10 minutes, then let them cool for about 5 minutes.

These little buffalo bites are creamy, cheesy, and packed with flavor. You can dip them in ranch or hot sauce, but they’re so good you probably won’t need any extra sauce!
