5 Quick & Easy Lunch Ideas That Are Healthy & Frugal

If you need easy lunch ideas, check out the lunches I prepared this week for my husband for work. I'm always looking for inspiration for quick lunch ideas that are also frugal. I'll be using a variety of ingredients, so you'll have lunches that will not only save you money but also avoid lunchtime boredom.

Cucumbers and trail mix are my absolute favorite snacks, and the trail mix I purchased from Aldi is a little bit more on the sweeter side. I'll pack them in lunch storage containers from TJ Maxx that I like. 


I found Habanero Jack cheese at Aldi, so I added a stick of it to the lunch box. I also added a few Werther sugar-free candies and a Slim Jim.


Besides the snacks, I included a wrap using a Carb Counter tortilla, turkey breast from Aldi, and cheese and mayonnaise. I bought it on a deal at Walmart. Sometimes, instead of doing the wrap, I'll use Keto bread. For dessert, I sliced fresh strawberries and a think! nutrition bar for a filling, healthy lunch.

2. Easy chicken salad lunch idea

For the next lunch, I made chicken salad. Chicken salad is a quick, easy lunch idea that usually is made from the chicken breast I buy in cans at Sam's Club. 


 To make the chicken salad, I drain the water from the can of chicken. The chicken is already pre-cooked, so it's easy to make chicken salad from it.


Together in a bowl, I mix the chicken salad with Duke's mayonnaise. I never measure this; I add enough mayonnaise to our taste, usually a few tablespoons. Along with the mayonnaise, I add a dollop of mustard, and I add some salt and pepper to it. I leave this mixture in my refrigerator, and I can make a quick lunch by adding bread or lettuce to the main dish. 


Along with the chicken salad sandwich, I pack homemade sauerkraut. I love making homemade sauerkraut. Just cut cabbage into fine shreds. Place it in a bowl and add salt, squeezing the cabbage to incorporate the salt. Let it sit for 20 minutes which will produce a brine. I divide the cabbage and the juice evenly into Mason jars to store them. Store for a week for the cabbage to soften, then use as desired.


For lunch, I add lettuce and tomatoes, chicken salad, and sauerkraut to a divided lunch container. It's easy to make a filling, low-carb lettuce wrap stuffed with chicken salad, tomatoes, and sauerkraut. You can also eat the sauerkraut as a side dish. I usually add a granola bar as a snack for midday. 


I like the lunch containers because they keep everything from leaking and come with their utensils, making packing lunch easy.


I keep snacks on hand before and after lunch when I'm having lunch at home. My favorites are triple berry nut mix and fig bars.

3. BLT salad easy lunch

Next up, I'm going to be making a BLT salad. First, I'm going to combine all the ingredients for the sauce in a jar. That way, I can save it for another time.


I fill a jar halfway with a mayo mustard mix I picked up from Walmart. If you don't have that, use mayonnaise and mustard. I will pour about a half cup of pickle juice on top. Add ketchup to the top of that mixture.


I don't measure; I add each ingredient evenly to keep the consistency thick but spreadable. Then add paprika, garlic powder, dried minced onion, and ketchup.


Place a lid on the jar and shake it to mix all the ingredients until you have a blended sauce that tastes just like McDonald's Big Mac sauce. You'll use this as your salad dressing.


For the hamburger part of the salad, I will add garlic powder and minced onion to ground beef and cook it until browned. Add salt and pepper to taste.


Cut lettuce, tomatoes, and pickles into pieces. Layer lettuce, ground beef, tomatoes, and pickles, then top with shredded cheddar cheese. Drizzle the salad dressing on top of the salad for a Big Mac BLT salad.

4. Turkey ranch wrap

For the next lunch, I will use the green Carb Balance tortilla wraps. I'm going to put in some turkey and a little shredded cheese and then add some ranch. I also packed tangerines, a Babybel cheese round, and Snyder's twisted sour cream and onion pretzels with fudge drizzled popcorn for dessert.

5. Dinner leftovers for lunch

The final lunch is just leftovers from a dinner we had this week. I made a spicy Korean dish and served it with white rice. For lunch, I also packed sliced cucumbers and some cheese cubes.

    Deviled eggs and egg salad are both easy, nutritious, and cheap:). I add horseradish to deviled eggs, and curry to egg salad. I use lots of greens with egg salad sandwiches, and parsley from my kitchen parsley pot for deviled eggs.
