1. BBQ Chicken Baked Potatoes

Our first meal is BBQ Chicken Baked Potatoes, perfect for feeding a crowd affordably.


Ingredients:

  • 2 cups ketchup
  • 1/2 cup apple cider vinegar
  • 1/2 cup brown sugar
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 4 lbs chicken thighs
  • Potatoes
  • Olive oil and salt


Instructions:

  1. BBQ Sauce: Mix ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, lemon juice, garlic powder, onion powder, and salt.
  2. Chicken: Place chicken thighs in a Dutch oven, cover with BBQ sauce, and bake at 350°F for 45 minutes.
  3. Potatoes: Wash, poke with a fork, coat with oil and salt, wrap in foil, and bake at 300°F for 2 hours.
  4. Serve: Shred the chicken, top the potatoes with butter, chicken, sour cream, shredded cheese, and BBQ sauce.

This meal costs about $15 for 15 servings.

2. White Chicken Enchiladas with Green Chilies

Next, let's make White Chicken Enchiladas with Green Chilies, served with green beans.


Ingredients:

  • Rotisserie chicken
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 2 cups chicken broth
  • 1 bell pepper, chopped
  • 1 can diced green chilies
  • 1 cup yogurt or sour cream
  • Fresh mozzarella cheese

Instructions:

  2. Mix: Add green chilies and yogurt to the sauce.
  3. Chicken: Combine chicken with some sauce.
  4. Assemble: Fill tortillas with chicken mixture, roll, and place in baking dish. Top with remaining sauce and cheese.
  5. Bake: Bake at 350°F for 25 minutes.

3. BBQ Chicken French Bread Pizza

Ingredients:

  • 1 onion, chopped
  • 1 box pasta (rotini or elbow macaroni)
  • 1 can crushed tomatoes
  • 1 bag frozen corn
  • 8 oz shredded cheese
  • Seasonings: garlic powder, cumin, chili powder, salt


Instructions:

  1. Cook: Brown ground beef and cook onions together. Cook pasta according to package instructions.
  2. Combine: Mix beef, onions, cooked pasta, crushed tomatoes, corn, cheese, and seasonings.
  3. Bake: Pour into a baking dish and bake at 350°F for 30 minutes.

This meal costs about $7 for 8 servings.
