4 Dump and Go Crockpot Meals for When It's Too Hot to Cook

It's been scorching hot this week, so hot that my air conditioning is struggling to keep up. To avoid adding more heat to the house, I've been relying on my trusty crockpot to make meals.

These dump and go crockpot recipes are perfect because they require minimal effort and don't heat up the kitchen. Here are the delicious crockpot meals I made this week.

Mississippi meatballs

Ingredients:

  • 1 bag of Homestyle meatballs
  • 1 packet of au jus gravy mix
  • 1 can of Campbell’s beef consommé soup
  • 3/4 jar of pepperoncinis (including juice)
  • 1 packet of ranch seasoning mix
Making Mississippi meatballs

Instructions:

  1. Prepare the ingredients: Dump the bag of meatballs into the crockpot.
  2. Add the seasonings and broth: Pour in the au jus gravy mix and the can of beef consommé soup. Add 3/4 of the jar of pepperoncinis along with the juice. Finally, sprinkle in the ranch seasoning mix.
  3. Mix and cook: Stir everything together to combine. Cook on high for 2.5 hours.
  4. Serve: Serve the meatballs over mashed potatoes. I used family-size Bob Evans mashed potatoes heated in the microwave to keep the kitchen cool.
