4 Cheap, Quick & Healthy Leftover Ham Recipes
How do you use up leftover ham? Whether it's from Easter, Christmas, or some other time, you’re probably wondering what to do with leftover ham. I usually buy a ham that’s way too big for the three of us.
But can you blame me when the ham is at such a super low price? I usually buy another one after Easter or Christmas and keep it in my freezer. Here are some easy, healthy leftover ham recipes for breakfast and dinner so your ham doesn’t go to waste.
How I cook my ham
I’m sharing how I cook my ham–in the slow cooker! It’s easy and I don’t add anything to it unless I have a can of pineapple. I sliced some ham for dinner that night and diced more ham for recipes. I have two big containers of diced ham to use up.
I also have a ham bone that I stuck in the freezer for ham and beans to make later. I have another large container of sliced ham for sandwiches. Let’s get to the recipes where I can use these.
Ham frittata
This is basically an egg casserole. It’s an easy dish for breakfast, lunch, or dinner. I served it with rolls.
Ingredients
- Olive oil
- Zucchini
- Broccoli
- Onion
- Ham
- Cheddar cheese
- 10 eggs
- Milk
- Seasonings of your choice
1. Saute vegetables
Add oil to a frying pan, then add in onion, broccoli, and zucchini. Cook for a few minutes to soften.
2. Scramble eggs
I scrambled 10 or so eggs in a separate bowl. I added about a ¼ cup of milk to the eggs. Season to your taste. I used Everything Seasoning from Flavor God.
3. Add ham and cheese
I added about 1½ cups of ham and 1 cup of shredded cheddar cheese. Add sauteed vegetables into the bowl and mix.
4. Add to baking dish
Pour mixture into a baking dish. Bake at 375 degrees Fahrenheit for about 30 minutes.
Ham and cheese melt sandwich
This is a sandwich but with a slight twist on the bread. Instead of putting butter on the bread, here’s a better tip:
Ingredients:
- Bread
- Ham
- Swiss cheese
- Butter
1. Melt butter in a pan
Begin to melt butter in a frying pan. Put the entire sandwich in the pan on top of the melted butter to toast. It’s tough to spread butter on soft bread so this method is so much easier.
2. Flip sandwich
It can be tough to flip a big sandwich so it doesn’t fall apart. The inside didn’t get very melty, so you can use thinner bread and it will be easier to melt the cheese.
Ham and cheese drop biscuits
This is a basic biscuit recipe with flour. The biscuits are great for a snack or for breakfast.
Ingredients
- Flour
- Baking powder
- Salt
- Butter
- Garlic powder
- Ham
- Cheese
- Milk
1. Mix the dough
In a big bowl, mix the flour, baking powder, garlic powder, and salt. Then add in butter and mix by hand (I’m wearing gloves).
2. Add ham, cheese, and milk
When the butter was cut in I added small pieces of ham. I added cheese, too. The recipe calls for cheddar but I used mozzarella. Slowly pour in the milk. The mixture will be very bumpy, which is normal.
3. Drop dough on the baking sheet
Cover a baking sheet with parchment paper. Drop spoonfuls of the dough onto the sheet.
This recipe made 12 really big biscuits. Bake at 400 degrees Fahrenheit for around 13 minutes. The bottoms will be slightly browned.
Ham and sweet potato egg scramble
This is a meal prep breakfast bowl that I love. I also had extra sweet potatoes I wanted to use up. I ended up dividing the mixture into six containers so I could have breakfast for a week. I eat this with cottage cheese or fruit in the morning.
Ingredients
- 1½ cups of diced ham
- Diced sweet potatoes
- 1 white onion
- Seasoning of choice
- Olive oil
- 10 eggs
- Fresh spinach leaves
1. Saute diced potatoes
Add some oil to a pan and saute the potatoes for about 10 to 15 minutes until they become soft. Add a tiny bit of water to the pan to help them cook faster. Season to taste. Once they are done, add them to a large bowl.
2. Saute ham
Add more olive oil to the pan. Saute onions for a few minutes, then add ham to saute. When they are hot and soft, add them to the bowl of potatoes.
3. Scramble eggs and spinach
Crack 10 eggs and add to a large bowl. Add in a splash of water and scramble. Add the eggs to the frying pan. Add a handful of fresh spinach on top of the eggs.
4. Mix everything
Once the eggs and spinach cook, add to the pan the potatoes, ham, and onion. Mix.

Liked your ideas...My favorite cheap and easy from college days with 4 sons. A la king..3 ways with either chicken , turkey or HAM. I always serve mine atop rice. The Campbell soup recipe. Serve with salad and garlic toast or whatever. You can Google and get the recipe. Try it, you have to like it! 😍
